Preparation Time-40 minute
Ingredients:Vada:
Black gram lentils without skin(urad dal)-250gm
Ginger garlic paste-1/2 tbsp
Cumin seeds -1/2 tbsp
Salt to taste
Oil for deep frying
For Tamarind chutney:
Tamarind seedless(imli)-1 cup
Water-3cup
Sugar-1/4 cup
Chat masala-1tbsp
Red chilly powder-1/2 tbsp
Black salt or regular salt to taste
For Garnish:
Curd(dahi)-500gm(add sugar in it)
Tamarind(imli) chutney
Red chilly powder
Roasted cumin seeds powder
Salt
Method:(vada)
- Take a bowl and washed a lentils soaked it for 2 hours after a 2 hours drain water place it in grinder and grind a smooth past add a 2 tbsp water if required.(make a thick paste)
- Transfer it in big bowl and add salt,cumin seeds,ginger garlic paste and stir it for 5 to 10 minute.
- After that add a eno or baking soda mix well, keep aside for 5 minute.
- Heat oil in pan or kadai ,whip vada better briskly with the spoon and drop vada in oil with the help of spoon.
- Frying vada in high flame for 15 second then on low flame fry vada till become a golden brown.
- Take a other pan add 2 glass of water and boil it.
- Now remove vada from oil and sock them in boil water till it become a soft.(2-3 minute)
- Tamarind chutney:
- Take a tamarind and sock it in water overnight then grind them in grinder take out a pulp from it.
- Add a 1 cup of water in pulp and sugar,red chilly powder,black salt in it boil it on medium flame till chutney become sticky.
- Now turn off flame and add a chat masala on it.
- Garnish:
- take a serving bowl add vadas and pour curd on it and add little bit chutney on it.
- Sprinkle red chilly powder,salt,cumin seed powder on it.
- Now soft and sponge vada is ready.
